Celeriac is mainly used grated raw and seasoned (in France it is known as 'remoulade' celery). Combined with potatoes, it also makes a good purée. It is sold fresh or preserved.
In Europe, it is mainly produced in France, the United Kingdom, Italy, the Netherlands and Belgium. In contrast to celery stalks, which are very popular in salads, organic celeriac is virtually unknown in the USA.
