Edamame is the fresh soybean that is still green. In Chinese cuisine, edamame beans are used in stir-fry dishes. In Japan, they are cooked in their pods and served with salt; they must be shelled before eating. They are full of vegetable protein and are used in the trendy "poke bowls".
