Celery stalks are eaten fresh, as whole stalks or as stalks for soups or stews. For the canning industry, it can be found in two forms. Celery garnish", which is made up of sections of stalks, and "celery hearts", i.e. the base of the inner, softer leaves.
In Europe, it is mainly produced in Italy, Spain, France, Germany and the Netherlands. In the United States, it is one of the main "salads" consumed.
