Celery root: the best quality internally, all season long
Celery root is mainly used grated raw and seasoned (celery "remoulade" in France). Combined with potatoes, it also makes a good purée. It is sold fresh or preserved.
In Europe, it is mainly produced in France, the United Kingdom, Italy, the Netherlands and Belgium. Unlike celery, which is very popular in salads, it is virtually unknown in the USA.
